This is how hand pulled noodles are made


This is Lamian, hand-pulled noodles which originated from China and are made by twisting, twirling, stretching and folding the dough. Increased ratio of water to dough, salt and continued twisting and kneading makes this dough ultra-flexible for making long and thin spaghetti noodles by hand.

The idea is to stretch out the dough like a rope, bring the two ends together while twirling, and then stretch the dough again to its original length, says Jen on her blog describing how she went all the way to Beijing to learn how to make these.
